Chicken Fajitas (serves 4)


• 4 chicken breasts

• 1 sweet pepper

• 1 red onion

• 6 button mushrooms

• 1 tbsp. olive oil

• 1 tbsp. fajita spice

• Splash of tequila

Fajita Spice Mix


• 1 tbsp. chili powder

• 1 tsp ground cumin

• 1 tsp ground coriander

• 1 tsp smoked paprika

• ¼ tsp cayenne

• ¼ garlic powder

• 1 tsp salt


1. Slice chicken breast into long strips.

2. Slice the sweet peppers and onions.

3. Slice the mushrooms.

4. In a hot pan, drizzle the oil, and when the smoke is released, throw the chicken in and stir them. When the chicken is half way cooked, add the sliced vegetables and keep stirring. Add the fajita spices and a splash of tequila.

5. If using a gas stove, be aware that the tequila will flame, so keep you face and body away from the pan.

6. Keep cooking until the alcohol evaporates and chicken is cooked.
